Ingredients of Bay Chicken
- Prepare 2 1/2 lb of boneless, skinless chicken thighs.
- It's 2 cup of chicken broth - i use a chicken & tomato bouillon.
- You need 8 of bay leaves.
- It's 1 tbsp of adobo seasoning.
- You need 1 tsp of garlic powder.
- It's 1 tsp of dried oregano.
- It's 1 tsp of dried parsley.
- It's 1 of prepared rice.
- Prepare 1 of salt & pepper to taste.

I used chicken with the bone and Cajun seasoning and a old bay because I didnt have enough Old Bay. It was a delicious dish I made mashed potatoes and green beans marinated in butter and salt and old bay.
Bay Chicken step by step
- ***Can use 2 1/2 lbs - 4 lbs of boneless or bone-in chicken - your preference *** In a large skillet or dutch oven, combine all ingredients. Bring to a boil for and simmer for a few minutes till all broth & spices seem well combined..
- Reduce heat to low. Simmer, uncovered, for about 40 to 45 minutes. Make sure you keep bay leaves in broth. Spoon broth over chicken occasionally & flip chicken thighs once or twice during cooking..
- I always serve this in a pasta bowl. I place in a piece of chicken and a few tablespoons of broth in the bowl - then spoon in a serving of rice on top...this way you can eat the rice & broth together but the rice doesn't get mushy..
- This recipe is also wonderful with bone - in chicken. I usually bake it covered slow, in a warm oven. Hope you enjoy ❤.
Traditional cooking rules and many "fuddy duddy" cooks says that just can't be. It's said that using too many bay leaves will leave a dish too bitter and pungent - "just one or two will do". The base for this chicken marinade is vegetable oil (or olive oil) with lemon juice then a blend of spices that give you the flavor that you desire.
